Preheat oven to 375 °
Bake 8-10 minutes
1 cup butter, softened
1 ½ cup brown sugar
½ cup sugar
2 large eggs
1 tsp coconut extract
2 ¾ cups all-purpose flour
1 tsp baking soda
½ tsp salt
6 to 8 oz dried unsweetened pineapple, soaked in water to soften then chopped
1 cup macadamia nuts, chopped
Directions:
Cream Butter: In a large bowl, cream 1 cup softened butter and sugar until fluffy.
Wet Ingredients: Beat in eggs and coconut extract
Dry Ingredients: Combine flour, baking soda, and salt; gradually add to the butter mixture.
Fold-ins: Stir in dried pineapple and macadamia nuts
Bake: Drop rounded teaspoonfuls onto sheets and bake for 8–10 minutes until edges are golden.
Cool: Let cool on the sheet for 5 minutes before transferring to a wire rack.
