1 Organic Lemon
6 inches Fresh Ginger Root
1 Cup Honey
Mason Jar (16 ounce)
Wash and thinly slice (about 1/8 inch) lemon and remove seeds. Take a spoon and scrape off as much outer layer of ginger root skin as possible (if there is a tiny bit left, that’s okay). Wash the root and slice into 1/8 inch pieces.
Take a clean, wide mouth mason jar. Layer a slice of lemon with about 2-3 slices of ginger until they fill the jar. Pour honey into the jar until it is full. It make take a little time for it to seep into the bottom. Seal the jar and place in refrigerator for at least 24 hours.
To make tea, place hot water in a tea cup, add 1-2 Tbsp from the top of the jar (the liquid portion), a slice of lemon and ginger, and 1-2 Tbsp from the bottom of the jar (the thick honey). Mix well, sprinkle some cinnamon if desired. Enjoy!
The mixture will stay good in the refrigerator for 2 months.
NOTE FROM NAOMI: Sometimes I grate the ginger instead of slice it, and I eat the ginger while I am drinking the tea.
