½ 12 oz package of SOMEN noodles (Nanka Seimen)
Put noodles in boiling water. When noodles rise to top, you strain them and rinse with cold water. (or follow instructions on package). Place back in pan to mix with the sauce. (Note: can use angel hair spaghetti instead)
1 TBL sesame seeds
1 TBL sugar
salt to taste (about ¾ tsp.)
1/8 cup sesame oil
1/8 cup memmi (fish stock, can buy in store)
¼ to ¾ cup vinegar or lemon (to taste)
sake to taste
some lemon zest to taste
Mix all sauce ingredients together and mix into the noodles
¾ cup ham or chicken cut in thin strips
½ small cabbage or lettuce, about 2 cup shredded
1 chopped green onion (or to taste)
½ sliced cumber (or to taste)
2 fried eggs, sliced into strips
red ginger
Add to the top of the salad ( DO NOT MIX IN) along with anything else you would like, such as: flat peas, green peas, string beans, bean sprouts, asparagus etc. Put in fridge and serve cold.
