Submitted by Christina. This is Dan's Mom's recipe. It's fast & easy, using canned clams.
1 box Italian angel hair pasta
2 cans chopped clams, 6.5 oz each
1 bottle clam juice
About 1/2 cup chopped parsley
5-6 cloves garlic, chopped
Olive oil
Cover the bottom of a saucepan with olive oil. Throw in the chopped garlic and cook on low heat about 5 minutes. Do not brown.
Add the bottle of clam juice & cook on low heat about 1/2 hour.
Meanwhile, heat water & cook pasta al dente (4 minutes).
Throw in the clams in their juice, just to heat through.
Throw in parsley at the very end. Salt & pepper to taste.
Put a serving of pasta in bowl. Ladle clams & juice over pasta.
There will be more pasta than you need for the amount of sauce, so you can use 1/2 to 3/4 of the box if you don't want leftover plain pasta.
Serve. No cheese.
