6 cups of fresh baby spinach
2-3 Tablespoons olive oil
5 cloves garlic minced
14 ounce can cannellini beans with liquid, or beans of your choice
salt and pepper
1 cup coarsely chopped mild pepper such as red bell peppers, banana peppers or lipstick peppers
3 oz cured meat such as ham, prosciutto, bacon or Italian sausage
Slice cured meat into bite sized pieces and brown. Set aside.
Heat olive oil over medium low heat. (If you browned bacon, there will be a lot of oil in the pan and you may not need to add olive oil).
Add garlic and cook until fragrant.
Add greens and peppers and cook until greens cook down. Stir occasionally.
Add the beans including the liquid and cook until beans have heated. Mix the beans in but do not stir too much or beans will break down.
Add cured meat.
Season to taste with salt and pepper.
Plate and sprinkle with freshly grated hard cheese.
Note: This recipe makes soupy greens and beans. If you like it drier add less bean liquid.
